1, Kneading make the dough more smooth and elastic when gluten added in the dough it makes the dough stronger and elastic provide better volume and gas retention. It allows yeast dough to stretch and expand more.
2, Even though dough expands and stretches more, the second rise is optional for the bread, but it makes the bread to become moire fluffier, provide more volume and avoid yeast flavor and provide fine texture to the bread.
3, there are 3 types of yeast. Regular active dry, instant yeast and fresh yeast.
4, Regular bread use yeast that reacts with gluten to make the dough to increase the quantity. sourdough bread is a combination of yeast and bacteria growing inside a paste with water and flour. bacteria form lactic acid that forms the fermentation for the dough. It has a low glycemic index than regular bread.
