Law of DMU- law of diminishing marginal utility states that as we consume more and more unit of a good the successive utility from consuming additional unit of that good goes on falling.
The restaurant owners are very much aware of this concept and understand that a consumer will consume tell that unit where is marginal utility is positive. They knows that when a consumer consumes additional unit that marginal utility declines. That is why the consumer would not go for dissatisfaction and this would make them stop soon.
