Yes you can surely participate in Gsoc as there are ample projects in the field of ehtical hacking and cyber security.

To begin this pursuit, you need to start learning an open source tool in field of cyber security and work on them. Then try to build your own set of plug-ins for the existing tools or even go to the extent of developing payloads for metasploit( a platform used for pentration testing). And if you are into penetration testing then you can also look for port scanning and other tools for vulnerabiltiy scanning.

Now if I talk specifically about the courses that you can undertake as a beginner to have hands on experience in open source projects which is a must for GSoc, then you can take CEH course and also bug hunting course, These two courses will get you acquainted with this field and its projects and then you can get your hands dirty by digging deep and developing your own exploits.

It is surely a vast topic, but if you start now and start with the above mentioned, you will surely reach your goal.
