Fat Menu Design :

A hierarchy that has relatively more secondary sites reporting to the central site than it has primary sites with child sites reporting to a central site. This type of hierarchy has three or less tiers , with many site servers in the upper tiers.

Deep menu Design :

A multitiered hierarchy made up of a chid primary sites with a small number of secondary sites reporting directly to each primary site. A deep hierarchy usually has three or more tiers, with fewer site servers at each tier. The more tiers and the fewer chid sites in your hierarchy, the deeper it is. Usually, sites in a deep hierarchy are larger sites.
