• 65 g granulated sugar

Chocolate Mousse – makes 6 servings

• 225 g semisweet baking chocolate, coarsely chopped

• 120 mL water

• 4 g butter (no substitutes)

• 3 egg yolks

• 30 g sugar

• 295 mL whipping cream, whipped
