The Copper uses HEME-copper oxidase catalysis for the reduction of liquid Oxygen gas (O2) in zero-oxidation state to H2O with the oxygen being in the oxidation state of -2.

The Copper is being preferred over Iron because of the below factors

1) Higher redox potential of Cu as compared to Fe

2) Weakening of O-O bonds due to the higher electron density of d-orbitals in Cu atom as compared to Fe atom with the neutral stage configuration of 3d6, whereas Cu has full 3d10 4s1 configuration.
