The found acceleration of a knife dropping into peanut butter was 10 m/s^2. Does it make physical sense for acceleration to be greater than gravity (9.80 m/s^2)? Put another way: should the knife have sped up more rapidly than it slowed down, or the reverse? Why?

The acceleration of a knife dropping is still 9.80 m/s2 but we say it 10m/s2 just for simplicity but the actual value of acceleration due to gravity is 9.8m/s2 ( We write 10m/s2 in calculation to avoid complex calculation)

The acceleration due to gravity is maximum at surface of earth on going high attitude the value of acceleration due to gravity decreases but it doesn't increase. To increase or decrease the acceleration ( Speed up or Down) of the knife we have to apply external force.

I hope you got my point if have any more doubt comment below
