The importance of sets is one. They allow us to treat a collection of mathematical objects as a mathematical object on its own right.
For dealing with finite collections of objects we can somehow wiggle around sets. We just specify our objects. Sets allow us to develop mathematical theories formally, by having the collections we want to talk about as mathematical objects on their own accord.
The essense of a class in set theory is that this is a "collection" of sets, which can be described by some property, but it might be so big that it is not a set on its own.
The essence of a class in OOO is to be a "closed" structure of data and
corresponding proterties/functions/methods, encapsulating these things which belong together. A class is a sort of abstract definition, instantiated by members.
Having said this, the only relation between these two notions of "class" is that in both cases, a class is a collection of entitities which are somewhat (intensionally) described. IN sete theory with FOL formulas, in OOO using the notion of some programming language.
