If he is able to complete all the core parts of the job then it's reasonable to give the accommodation of 10-minute break after every hour of work, given that his efficiencies are good and his health wouldn't be damaged in the long term.

Such moves by the organization will further increase its Brand value in the employee.

In the case in which he is not able to perform the core parts of the job or the job has a risk of damaging his health due to allergies, alternative positions where his skills can be used are to be identified. Denying Sheldon should be considered if there are no other possibilities that can be done.
