Three functions of water:

  1. Water is a polar solvent: Water is known as ‘general solvent’ or ‘universal solvent’. All (except lipid) the biomolecules (vitamins, salts, amino acids, gases, and glucose) transport inside the body by dissolving in water.
  2. Water can ionize molecules: Water has the ability to disassociate molecules positive and negative ions

For example, the sodium bicarbonate (NaHCO3) is secreted from the pancreas. The aqueous solution of sodium bicarbonate generates H+ and CO3- ions. The bicarbonate ions make the medium pH alkaline suitable for the enzymes.

  1. Adhesion and Cohesion of water: This adhesion makes water molecules to connect with other polar substances. This property helps water to move upwards against gravity through the narrow xylem of tall plants.
