Answer is chymotrypsin-

it is protease which cleaves the proteins at the N-terminal of Phenylalanine, tryptophan, tyrosine. It is synthesized in inactive form as chymotrypsinogen in the pancreas. Upon reaching the duodenum it is activated into chymotrypsin where it cleaves the proteins.
