What are the advantages and disadvantages of an ice bath and an immersion chiller for cooling wort? As a homebrewer, which cooling method would you prefer to cool wort with and why?

Advantage of immersion chiller:

No need to sanitize! Since you are submerging the chiller in boiling wort, any bacteria present will be killed instantly. When you are finished, be sure to rinse well with hot water.
Easy to use! An immersion chiller is highly recommended for novice to intermediate brewers. No special connections are required, with the exception of the faucet adapter if you are attaching it to your kitchen sink.

Disadvantage of immersion chiller:

The only real disadvantages to using immersion wort chillers are the cooling time and the amount of water used as compared to counterflow chillers. Still, a quality immersion chiller only takes about fifteen minutes to be effective, and it uses a lot less water than an ice bath.

Advantage of ice bath:

The ice bath is the least complicated chilling system, and it's the one that most homebrewers start off with. To use an ice bath, fill a large bucket (larger than your brew kettle), sink, or tub with cold water and ice, and simply soak your kettle in it. The more water you use, and the colder water you have, the quicker your wort will chill to fermentation temperatures. I usually fill a few old milk jugs with water and freeze them a few days before brewing. They're faster to make than ice cubes, and they stay frozen longer, too.

Inexpensive (you need a sink, water and ice). No extra cleaning/sanitization required.

Disadvantage of ice bath:

The biggest downside of this method is the amount of time it takes to cool the wort. If you're doing small batches (3 gallons), it will take at least an hour to get your wort below 70°F, and that's with adding ice a few times through the process. If you're doing 5 gallon batches, expect it to take a couple hours and a lot of ice. It's helpful to add a very large amount of ice and let it chill overnight. While the process may be low maintenance, the extended chill time may impair beer clarity and increase the risk of infection in your beer.

As a home brewer , I will prefer immersion chiller.It is very important to cool your wort to below 80 degrees as quickly as possible after the boil. This is the time that the wort is most susceptible to bacterial contamination. A wort chiller nearly negates any chance of infection. A wort chiller also helps to produce clearer beer, since it helps to facilitate cold break. Cold break is composed of protein and tannin complexes that become insoluble as the temperature of your wort drops. Good cold break means clearer beer. A wort chiller is probably the most time-saving, economical device a homebrewer can buy. It’s the one thing that we tell everybody buying a Midwest Homebrewing Equipment Kit that they should not be without.
