In determination of the degree of unsaturation of lipids, why does the blank titration use more Na2S2O3 than the lipid sample titration?
The iodine value is the total weight of iodine that is bound to the sample, since the glycerides found in the unsaturated fatty acids tend to bind to the halogen.
If a blank is titled, there will be no glycerides to which the iodine will be bound, therefore, they will be free in the solution and will be titrated with sodium thiosulfate.
