Why is it necessary to use both channels of the oscilloscope to observe the secondary voltage when the ground reference is in the center of the transformer in a tap centered rectifier?

For a center tapped rectifier, where the center of transformer at the secondary turns is grounded has voltages of opposite polarities on both sides. Those opposite polarity voltages are to switch on only one of the diodes for each half cycle of the input. To observe those waveforms, both channels of the oscilloscope are needed.
