So do information security policies or standards related to specific operating systems (Windows, Linux, ios) make sense? If so, what would be a recommended method to find or create the content for them and keep them updated?

Yes, information security policies or standards related to specific operating systems (Windows, Linux, and iOS) make sense. Policies are some predefined instructions to handle a particular situation. It helps the members to take decision based on the current scenario. This are written down and presented to both peoples inside and outside of an organisation.For any policies related to the OS it is stored in the system folder also a copy is sent to the user over the mail. All the policies and standards consists of the high level statements for execution in a particular situation. It also stores the configuration information, security protocols and updates which are there in the OS. Policies are there to last for five years while the standards last for only a couple of years. So from time to time the policies and standards are updated and stored all over.
