The Ampere -hour rating of car battery gives the measure of amount of continous current that it can supply to the load for a particular time before discharging completely. This can be understood by an example that a battery with rating 120 Ampere-hour this means that the battery will provide 120 Amps of continous current for 1 hour, or it will provide 60 Amps of current for 1/2 hour. During the use one of the quantity that is time or current is fixed and accordingly the other is known with the help of the rating. This relationship between Continous Current and discharge time is Stable and Absolute for ideal batteries but practical batteries deviate from this linear relationship, Since at higher current the heating factor also comes into play so the batteries might get discharged before the expected time.
