It is a fine dispersion of minute droplets of one liquid in another in which it is not soluble or miscible.The process of turning a liquid mixture into an emulsion is called emulsification. e.g.

  • Oil and water mixtures are emulsions when shaken together. The oil will form drops and disperse throughout the water.

Techniques that can be used to eliminate emulsion are:

Centrifugation. It is the best way to break an emulsion using centrifugal forces

Ultrasonic bath. Place the emulsion extract/solvent into an ultrasonic bath with ice. The liquid phases will separate
