The slope of the line is nothing but the measure of (y coordinate/x coordinate) i.e. slope =y/x.

So, in the volume vs mass plot,mass is on y axis and volume is on x axis,so when the slope of the line of best fit is calculated on this plot then it will be y/x=mass/volume which is equal to the density.

As,density = mass/volume.
