Antifreeze proteins play an important role for cold tolerance in plants by inhibiting ice growth in the intercellular spacec. These proteins belong to a group of proteins that have the ability to inhibit ice crystal growth by binding with ice. Antifreeze proteins integrates with ice crystals due their attraction for surface of ice and cause to reudce the growth of ice crystals. Antifreeze proteins are also found in the body of animals. Antifreeze proteins were first discovered by a Canadian scientist Scholander during 1950s in the body of artic fish.Among plants antifreeze proteins were first discovered in winter rye by a scientist called Griffith.
