Small intestine is responsible for breaking down the fat molecules into simple molecules to increase their surface area. This is called as emulsification. This is carried out by using bile juice which is secreted by liver and stored in gallbladder.
The final breakdown of small molecules of fat into fatty acids and glycerol is carried out by lipases which are hydrolytic enzymes secreted by pancreas.
