A number of amino acids would be affected by oxidation such as Met, Cys, His, Tyr, Trp etc. The reason is that all these amino acids contain group which can be oxidized easily such as -OH group in Tyr or -SH group in Cys.
Amino acids such as Cystine and Met are susceptible to reduction. Cys contains disulfide linkage which on reduction gives 2 cysteine residues, that are stable.
