Antimicrobial resistance is the serious health threat faced by the public.Antimicrobial peptides have the ability to kill microorganisms and can be taken as an alternative to antibiotics as we can minimize the usage of antibiotics in future.So AMP (Anti Microbial Peptides ) can be extracted from food protein hydrosylates using enzymatic hydrolysis.High antimicrobial properties /activities depend on the degree of hydrolysis,peptide source,type of enzyme used for the hydrolysis process.Temperature,pH,enzyme concentration and hydrolysis time have impact to the degree of hydrolysis. Flavourazyme in different concentrations was used at pH 7 to hydrolyze protein at 50 degree celsius. pH stat method,SDS-PAGE,RP HPLC-MS were used to eveluate degree of protein hydrolysis,pattern of peptide formation and characterize smaller peptides in hydrosylate. Higher concentartion produced more number of small peptides.Protein hydroslyate was again hydrolyzed at 30 degree celsius with Beta-galactosidase at pH 5.5 to hydrolyze lactose.HPLC analysis indicated the degree of lactose hydrolysis and number of polysaccharides formed due to varied enzyme concentration.
